Post Holiday Comfort Food Pot Roast with Garlic and Cauliflower

You survived the holidays – whew! Whether you had to endure preparing a meal for 42 distant relatives or perhaps reined in drunk Aunt Betty’s attempts at hula-hooping, you are a superstar. And you are DONE. Now it is time for some serious comfort food which is high in deliciousness but low on the fat content (if you buy lean) to help you get into your New Year’s Diet Resolution mode. Solution: no added cooking oil pot roast that has only a few ingredients, lots of flavor, and takes less than 10 minutes to throw in the pot. Easy-postholiday-peasy.
Beef Pot Roast with Garlic Cauliflower
- 1 1/2 pound lean beef pot roast
- 1 head organic cauliflower, chopped into bite-sized pieces
- 4 Tablespoons chopped garlic
- 2 Cups water
- salt and pepper to taste
Combine all the ingredients in a baking pan. Cover. Bake in a 325-degree oven for 3 to 4 hours.
