Ingredients
  

  • 2 cups cooked rotisserie chicken cut into bite-sized pieces
  • Raw vegetables
  • Shish-ka-bob sticks

Dressing Ingredients

  • 1/4 cup orange juice
  • 1/8 cup lemon juice
  • 3 Tbsp olive oil
  • 2 Tbsp vinegar
  • 1 tsp ginger, finely chopped (or more if you like)
  • 1 garlic clove, crushed and chopped
  • 2 tsp sesame seeds
  • Black pepper to taste
  • Citrus zest (optional – I always like to zest a bit from the citrus I’m using to ramp up the flavor)
  • ¼ cup cilantro or Italian leaf parsley chopped (optional)

Instructions
 

  • Mix all dressing ingredients together, set aside to marinate an hour at room temperature
  • Marinate chicken and vegetables in salad dressing mixture for one hour
  • Place marinated rotisserie chicken and vegetables on shish-ka-bob sticks
  • Serve immediately
