Asian Salad Shish-ka-Bob Bites Recipe

This delicious Citrus Asian Salad Shish-ka-Bob recipe is an easy way to use up leftover rotisserie chicken. Yummy!

- 2 cups cooked rotisserie chicken cut into bite-sized pieces
- Raw vegetables
- Shish-ka-bob sticks
Dressing Ingredients
- 1/4 cup orange juice
- 1/8 cup lemon juice
- 3 Tbsp olive oil
- 2 Tbsp vinegar
- 1 tsp ginger, finely chopped (or more if you like)
- 1 garlic clove, crushed and chopped
- 2 tsp sesame seeds
- Black pepper to taste
- Citrus zest (optional – I always like to zest a bit from the citrus I’m using to ramp up the flavor)
- ¼ cup cilantro or Italian leaf parsley chopped (optional)
Mix all dressing ingredients together, set aside to marinate an hour at room temperature
Marinate chicken and vegetables in salad dressing mixture for one hour
Place marinated rotisserie chicken and vegetables on shish-ka-bob sticks
Serve immediately
