White Fish, Swiss Chard, Spinach, and Black Bean Salad Recipe
For several years both my daughters had decided they were vegan or vegetarian in one form or another and for the first time ever in my life I really tried to cook more with beans in order to help supplement their health. Ultimately, we all got a great education about healthy eating and I became ABSOLUTELY ADDICTED to beans. I love them. One of the best recipes ever is this white fish with Swiss chard, spinach and black bean salad. You can serve the white fish breaded or not, hot or cold, but the salad should be at room temperature and made fresh – it usually takes me 10 minutes to assemble. Use your own quantities, do not let me dictate “one cup of this or one cup of that” as you know what you like and the recipe is easy. I used Swiss chard grown with seed from J.W. Jung Seed Co. Healthy, delicious, and easily under $10, especially if you grow the greens yourself.
HOW TO MAKE A SWISS CHARD, SPINACH & BLACK BEAN SALAD WITH WHITE FISH RECIPE
INGREDIENTS –
- Swiss chard, torn into pieces
- Spinach, torn into pieces
- Black beans
- Red bell pepper, diced
- Onions, diced
- Garlic, crushed
- Italian dressing
- Red pepper powder to taste
- Salt and Pepper
- White fish
DIRECTIONS –
Mix everything together except the white fish using your best judgement on quantities – you know what you like. Then lay the white fish out the way you prefer (baked, fried, broiled – hot or cold), top with the amazing salad. BOOM. Done.
