How To Cook Green and Healthy For $10 or Less – Turkey Salad

In today’s difficult economy, one of the most challenging things to do is to feed our family good, nutritious, chemical-free food for a reasonable price. This need has inspired a video series called “Living Lean & Green; How To Cook Healthy For $10 or Less”.

Above you see the first video of the series which features Chef Ryan Hutmacher, The Centered Chef of Centered Chef Food Studios, cooking with me in my Burpee Home Gardens front lawn vegetable garden. Together, we are creating meals that cost a family of four $10 or less to prepare and feature organic vegetables I have grown myself.
Our goal is to show the everyday person that it is possible to grow your own vegetables sustainably, then use these vegetables to feed a family of four on the cheap utilizing Chef Ryan’ Hutmacher’s amazingly healthy recipes.

Today’s Curried Turkey Salad recipe features onions I grew myself. Please link to instructions here on – HOW TO PLANT AN ONION.

Curried Turkey Salad
3/4 lb turkey breast, medium dice (chicken may be substituted)
1 1/2 oz grapes, halved
1 1/2 oz apples, diced small
1 1/2 oz celery, diced small
1 1/2 oz onions, red, raw, diced small
1/2 oz dried cherries
1/2 oz dried apricots

Dressing
2 oz mayonnaise (or substitute 2-ounce organic Greek yogurt, plain, low fat such as Stoneyfield yogurt)
1 Tbs dijon mustard
1 Tbs curry powder
1/2 Tbs vinegar, red wine
1 tsp lemon juice

3/4 oz lettuce
4 each naan bread, grilled (Tortillas or bread can be substituted)
1. Combine all of the dressing ingredients, blending until smooth. Season to taste.
2. Toss the turkey, grapes, apples, celery,  onions, dried cherries, and dried apricot with the dressing.

Servings: 4 – cost is under $10
