Adults should consume 1.5–2 cup-equivalents of fruits and 2–3 cup-equivalents of vegetables daily.” We Americans consume way less fruits and vegetables than we should on a daily basis. Rotating cooked and raw vegetables is a great way to increase those numbers and fill your diet with taste and nutrition.
Raw Vegetables Last Longer with These Storage Tips
Raw vegetables are easy to slice up and store in the refrigerator. Celery, carrots, and other “tall” stem-like veg are particularly long-lasting. But they need to be stored properly. Store in a glass filled with a bit of water for more than a week in the refrigerator.

Creamy Dairy-Free Ranch Dressing & Dip Recipe
Ingredients
- 1 Cup dairy-free, soy-free mayonnaise
- 1/3 Cup coconut milk, unsweetened (or coconut crème if you want thicker dressing)
- ¼ Cup chopped green onions
- 1 ½ Tbsp ranch dressing seasoning mix
- 1 Tbsp lemon juice
- ½ tsp ground black pepper
- Salt to taste (optional)
Instructions
- Combine all the seasonings in a jar and shake like you mean it
- Serve as a snack. To travel with the snacks, place the dressing at the bottom of small ball jars, then stack vegetables vertically on top and placing lid on top. Easy to prep and store in the ‘fridge for transport to school or work the next day
- Store in an air tight jar in the refrigerator
Ranch Dressing Seasoning Mix Recipe
Ingredients
- 2 Tbsp dried parsley leaf
- 1 1/2 Tbsp dried dill
- 1 1/2 Tbsp garlic powder
- 1 1/2 Tbsp onion powder
- 1 tsp salt
- ½ tsp dried basil leaf
- ½ tsp ground black pepper
Instructions
- Combine all the seasonings, mixing well (or grinding with a mortar and pestle for a finer consistency)
- Place in an air tight jar
- Store in a cool, dry location
