Christmas Ham Bone Crockpot Soup Recipe Beekman Style
You have a delicious ham for Christmas and I have a fabulous way to stretch that ham dollar to save money for the week after the big dinner. This season I found a super-cool soup idea by the Beekman Brothers – 7 Sisters’ Antique Bean & Barley Soup Mix. I realized I did not have time to watch a stock pot after I came home, so I tossed out the rules on the box and threw everything in a crockpot to simmer all day. (By the way, I don’t know the Beekman Brothers – although I’d love to meet them – I just randomly pulled this mix off the shelf in a rush. Smart move, because it turned out flavorful and beyond delicious.)
First – do not follow the recipe on the soup mix box (right), try it my way (recipe below) and see what happens. Live large. Experiment.
Start with a ham bone – save as much ham meat as you can as well. I froze 13 cups of turkey broth from Thanksgiving and melted it in a hot crockpot while I chopped the vegetables. It took less than 15 minutes to put the entire thing together.
- 13 cups turkey or chicken broth
- 1 ham bone
- Extra ham – a few cups chopped
- 1 cup onions, chopped
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 “7 Sisters’ Antique Bean & Barley Soup Mix”
- Pepper to taste
- Throw everything into a crockpot and simmer on low 6 to 8 hours. Remove ham bone before serving.
- Eat up. That’s it. Totally delicious!
