Curried Deviled Eggs Recipe
Curried Deviled Eggs are the bright tasting flavor surprise you are waiting to try if you are an egg lover like me. I spent my childhood in Indiana filled with my grandmother’s deviled eggs at every family party. This makes me a bit of a deviled egg aficionado. We made them Hoosier style – sweet – and filled with mustard and mayonnaise. Having come from midwestern Deviled Egg Heaven, most any deviled egg will not do.
Curry is Anti-Inflammatory
Many experts speak to the anti-inflammatory health benefits of curry. Many ingredients of curry can be healthy, but turmeric – a major ingredient in yellow curry – features curcumin. Curry studies have shown suppression of some cancer cells, including lung, colon, breast, ovarian, prostate, and bladder cancer. My concern is that we do not have a substantive detail on HOW MUCH curry is good for you. What is the exact dose of curry? There is currently not a unified agreement amongst medical professionals. With this in mind, cooking with curry seems a great choice, but dosing yourself up with high doses would not be recommended.
Curry comes in many flavor profiles. My favorite for curried deviled eggs is a yellow curry; full of flavor, but not very hot. It adds a touch of yum without the burn-your-mouth after taste. If you prefer green curry or any other level of hotness, you can add that to this recipe as well. It is all up to you!
Soy-Free Mayo in Curried Deviled Eggs
Eating an anti-inflammatory diet means removing the soy that you normally find in mayonnaise and changing it up with a soy-free product. Mayonnaise is not a healthy fat overall, but I feel comfortable OCCASIONALLY dropping it into my food plan. I use my favorite soy-free mayo when making Curried Deviled Eggs. Delicious and without the soy-trigger I get with traditional mayo.
If you don’t have time to hard boil eggs, not to worry, purchase organic pre-cooked at almost any big grocery store. If there are any leftovers of this delicious snack, reserve it for the next day — mash the eggs up and use as “curried egg salad” on lettuce for lunch. Awesome!
Curried Deviled Eggs Recipe
Ingredients
- 12 hard-boiled eggs, cooled and sliced in half
- 6 Tbsp soy-free mayonnaise
- 1 Tbsp apple cider vinegar
- 2 tsp Dijon mustard
- 1 tsp curry powder (or more if you prefer)
- Salt and pepper to taste
- Cherry tomatoes, chopped fresh cilantro or Italian parsley for garnish
Instructions
- Separate eggs from yolks
- Reserve both eggs and yolks in separate bowls
- Mix mayo, vinegar, mustard, curry, salt and pepper together in small bowl

- Add yolks to bowl of dressing ingredients, mash and stir together until smooth, let rest covered 20 minutes
- Place hard-boiled whites on tray facing up
- Put the egg yolks in the whites with a spoon – be sloppy – no need to be neat. If you feel fancy, fill a piping bag with yolk mixture and fill the whites with fancy twirls
- Garnish with tomatoes or fresh herbs
- Store in refrigerator until ready to serve
