Wonderful White Fish in Thai Coconut Sauce

This is a wonderful fish dish for any occasion. It's easy to make, and it's healthy too!

- 2 pounds white fish, skinless and cut into 2 inch pieces
- 4 limes, juiced
- 4 cloves garlic, crushed
- 2 Tbsp Coconut Thai Spice Seasoning
- 2 Tbsp olive oil
- 1 large onion, diced
- 4 tomatoes, chopped
- 14 oz can of coconut milk
- 6 sprigs fresh cilantro, chopped
- Salt and pepper to taste
Mix juice, garlic, and Thai Spice in a bowl, marinate fish for two hours
Heat oil in pan and sauté vegetables until slightly tender
Stir in coconut milk, fish, and marinade, letting simmer covered for about 20 minutes
Salt and pepper to taste, and serve with chopped cilantro sprinkled over the top
