Separate eggs from yolks
Reserve both eggs and yolks in separate bowls
Mix mayo, vinegar, mustard, curry, salt and pepper together in small bowl

Add yolks to bowl of dressing ingredients, mash and stir together until smooth, let rest covered 20 minutes
Place hard-boiled whites on tray facing up
Put the egg yolks in the whites with a spoon – be sloppy – no need to be neat. If you feel fancy, fill a piping bag with yolk mixture and fill the whites with fancy twirls
Garnish with tomatoes or fresh herbs
Store in refrigerator until ready to serve
