- 1 butternut squash, sliced in large cubes (or buy pre-cut at the grocer)
- Extra virgin olive oil (spray olive oil is super-easy to use and works well)
- Italian seasoning to sprinkle
- Salt and pepper to taste
Preheat oven to 400 degrees
Coat a baking sheet with olive oil
Place cubed squash on top of olive oil, coat with a light topping of more olive oil
Lightly sprinkle Italian seasoning over the top
Sprinkle with salt and pepper (heavy on the pepper if you like spicy)
Roast for 30 minutes or until tender and browned
Serve hot with toothpicks for a snack or appetizer
