Italian Roasted Butternut Squash Bites Recipe

Ingredients
  

  • 1 butternut squash, sliced in large cubes (or buy pre-cut at the grocer)
  • Extra virgin olive oil (spray olive oil is super-easy to use and works well)
  • Italian seasoning to sprinkle
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees
  • Coat a baking sheet with olive oil
  • Place cubed squash on top of olive oil, coat with a light topping of more olive oil
  • Lightly sprinkle Italian seasoning over the top
  • Sprinkle with salt and pepper (heavy on the pepper if you like spicy)
  • Roast for 30 minutes or until tender and browned
  • Serve hot with toothpicks for a snack or appetizer
