Preheat oven to 350 degrees
Slice top off an apple, retain the top slice
Slice the bottom so it sets level on a baking dish
Core the apple gently with a paring knife, retaining a bowl like shape, do not take too much apple away
Place a layer of shredded coconut and nuts on the bottom of cored apple hole
Top with a generous spoonful of almond butter
Add more nuts and coconut
Sprinkle all the apples with a bit of cinnamon
Put the top back on the apple
Place the filled apples on a baking sheet lined with parchment paper or sprayed with non-stick spray
Bake 30 - 50 minutes or until apple is soft
Serve warm, of course, the apples are great with coffee for an afternoon snack
