Hot Baked Apples with Sunbutter Recipe

Piping hot baked apples with no added sugar and all the delicious flavor of chewy coconut and rich seed or nut butter? YES! This recipe is dairy-free, grain-free, yet flavor - full. Perfect for apple season or any old time!

Ingredients
  

  • Apples
  • Sunbutter
  • Shredded coconut
  • Pecans or almonds
  • Cinnamon to sprinkle

Instructions
 

  • Preheat oven to 350 degrees
  • Slice top off an apple, retain the top slice
  • Slice the bottom so it sets level on a baking dish
  • Core the apple gently with a paring knife, retaining a bowl like shape, do not take too much apple away
  • Place a layer of shredded coconut and nuts on the bottom of cored apple hole
  • Top with a generous spoonful of almond butter
  • Add more nuts and coconut
  • Sprinkle all the apples with a bit of cinnamon
  • Put the top back on the apple
  • Place the filled apples on a baking sheet lined with parchment paper or sprayed with non-stick spray
  • Bake 30 - 50 minutes or until apple is soft
  • Serve warm, of course, the apples are great with coffee for an afternoon snack
