Chicken Broth/Stock Taste Test & Collagen Facts

Chicken Broth Review

Did you know that chicken stock and chicken broth are not the same? Chicken stock comes from the bones, is more gelatinous and has more anti-inflammatory benefits than chicken broth. Broth from chicken is generally lighter in taste and thickness than stock, and is based on the meat, not the bones. Further, chicken stock, not broth, contains collagen.

Chicken Stock/Broth Adds Nutrition to Many Dishes

To increase nutrition in soups and/or while cooking rice or mashed potatoes, you can add broth or stock. Additionally, you can use either in place of oil to “sauté” in a frying pan and prevent sticking. Below is a great low-cal sipping recipe made from chicken stock that I often enjoy during cold season or as a savory snack.

Grilled Onion and Chicken Stock Sipping Recipe

Ingredients:

  • 1/2 a medium onion, sliced thin
  • 2 cups chicken broth
  • Freshly crushed black pepper (heavy on for me)

Process:

Caramelize onion in a small pan, add broth and pepper. Heat through. Serve hot in a cup. Sip.

Chicken Stock/Broth Taste Test

All of the products reviewed below are labeled “USDA Organic”. “Organic” simply means that the broth is free of heavy chemicals. Each also has the added anti-inflammatory benefit of including turmeric in the ingredients.

Swanson Cooking Certified Organic 100% Natural Chicken Broth

Taste Test: Strong taste of vegetables, specifically onions and mixed vegetables. Rich chicken flavor. Lightly salted. Would taste good in a soup or stew. I really enjoyed the added vegetable flavors and would get this again purely for that feature.

As an added benefit, on the container cover this says “Free Range. 99% Fat Free . No MSG added! 1/3 Less Sodium than our regular product**”. This is made and distributed by Campbell Soup Company. There is 550 mg of sodium per serving.

Interestingly, although this product has “broth” in the title, the first ingredient is “stock”, which includes the added nutrition of collagen.

Ingredients: Chicken Stock, contains less than 2% of: Sea Salt, Vegetables (Carrots, onions, celery, spinach), chicken fat, yeast extract (wheat), can juice, dehydrated onions, salt, canola oil, molasses, dehydrated carrots, flavoring (wheat), turmeric, potato flour, black pepper.

Pacific Organic Free-Range Chicken Broth

Taste Test: Rich color. Taste is of a strong rich chicken flavor which almost tastes “roasted”. Good flavor. Would taste good in chicken soup.

On the container cover this says “Organic, Free Range Chicken Broth”. There is 570 mg of sodium per serving.

Bonus: This chicken broth is an even healthier anti-inflammatory option as it does not contain wheat.

This product is indeed made from broth not stock, however it has the added benefit of not containing wheat. It is not officially labeled as gluten free.

Ingredients: Chicken broth, chicken flavor, sea salt, cane sugar, onion powder, turmeric extract, rosemary extract.

Brad’s Organic Organic Chicken Broth

Taste Test: Not recommended. This broth tasted very bad and had a strange grayish tinge to its coloring. It is surprising that it being sold as a competitive product on the market. Interestingly, of the options that I tested; this was the only one where water was the first ingredient listed.

On the container cover this says, “Low Sodium, Organic Chicken Broth”. There is 140 mg of sodium per serving.

Ingredients: Filtered water, chicken broth, chicken flavor, onion powder, potato flour, yeast extract, garlic powder, flavoring, turmeric, and flavor.

Kirkland Organic Chicken Stock – THE WINNER!!!!

Taste Test: This Kirkland organic chicken stock was the richest and most flavorful for chicken taste as well as the darkest in color. Really delicious chicken flavor. While there was a blending of some vegetable flavors, this is the winner for low sodium and strong taste with all organic ingredients AND gluten free. Win-Win.

On the container cover this says, “Rich chicken flavor, more versatile than broth, gluten free”. There is 440 mg of sodium per serving.

Ingredients: Organic chicken stock, organic vegetable broth (organic carrot, organic celery root, organic onion juice concentrates), sea salt, natural flavor, organic turmeric concentrate, organic ground bay leaves, and organic black pepper extract.

  1. I have been using the Swanson brand for quite a while and it has a very nice taste to it. I should probably try one of those other ones to see how they stack up against each other.

  2. I recently had to try Kirkland’s stock after being a fan of Swanson’s for years (due to switching from our Sam’s membership to Costco). It tastes like chicken water; I’m not kidding. I couldn’t believe how tasteless my soups were when I used it. I know that Cooks Illustrated and Food Network magazine rate Swanson’s as the best and I concur!

  4. Kitchen Basics is pretty widely used and worth a look. There is “no salt” at 150 mg. and “low salt” at 440mg. The distinctive yellow container seems to be the one they cover up with their no endorsement label on the Food Network. I’ve used it for years. I just bought the Costco organic six pack and the first impression is good.
    Trader Joe’s and Whole foods might be worth a look as they are widely available and they often have good products.
