Living greener has meant a lot of exciting things have changed in my life. I cannot always afford to buy organic, but I try to do organic foods whenever I can. I think it is a goal we should all be working towards because eliminating chemicals from our foods is a significant step in becoming healthier humans.
Having your own vegetable garden means you have control over what chemicals go on and in your growing vegetables – and therefore in your bodies. My vegetables are grown all organically. In the video you see me cooking an herb and fresh organic vegetable no-cheese omelet in my front lawn veggie garden.
Get out there and grow your own – start planning now for next year’s garden season. I encourage you to think about how you can make a difference for yourself and your family.
Herb and Fresh Organic Vegetable Omelet
2 Tablespoons diced red onion
1/2 Cup chopped dinosaur kale
1/4 Cup cubed bell peppers
Herbs of your choice – we used thyme and chives
salt and pepper to taste
1. Saute vegetables until crispy in olive oil
2. Add herbs, heating through
3. Whip two eggs together and pour over herbs and veggies
4. Flip and cook until done
Servings: 1 to 2 — cost is under $10
