Ingredients
  

  • 1 Container of red pepper hummus (can substitute other flavors)
  • 1 bunch Swiss chard, washed and left in form
  • 1 handful Spinach, washed and left in form
  • 1 handful Cherry tomatoes
  • 1 or 2 red peppers, sliced thin

Instructions
 

  • Easy directions — make a face on the plate by spreading a circle of hummus, then adding cherry eyes, pepper mouth, and hair of fresh greens.
  • Serve with sliced red peppers and extra greens.

Why I Like Red Peppers

Without a doubt, red peppers are a staple in the American kitchen. They are sweet when raw and filled with vitamins, nutrients, and fiber. Another thing I like to do with red peppers is stir-fry them with my special cast iron wok. When you do a super hot stir-fry with red peppers, the scent and flavor blooms for the vegetable. This gives an amazing flavor to all your dishes.

Red pepper hummus reminds me of the pimento cheese my parents used to serve at parties when I was a kid, only it has a special twist – there’s no cheese in hummus – so this is a vegan and dairy-free option. Totally over-the-top yummy. Although this is one fantastic appetizer for an adult party, kids love to make the design after school then gobble it up.
