How To Peel or Deskin a Tomato In Less Than A Minute

My allergist tells me that tomatoes are the moldiest canned vegetable and perhaps that is the reason why – I am allergic to molds. Because of this cooking handicap, I have learned to use fresh tomatoes instead of canned in almost all my recipes.
The secret for doing this is to remove the skin of the tomato before cooking and that, my friends, is super easy to do.
HOW TO PEEL OR DESKIN A TOMATO IN LESS THAN A MINUTE
- Boil a pan of water
- Cut a few tiny slits in the skin of a tomato with a knife
- Toss it in the boiling water for less than a minute
- Pull it out and put the tomato in a pan of cold water
- Peel the skin off easily and place skin in composter

You could also turn those skins into tomato powder for instant tomato paste or soup flavoring!
